Nigel Williams presents My Taste with Bibendum Wine, a series of programmes interviewing renowned chefs and restaurateurs. Our latest guest is Xavier Rousset, Master Sommelier and co-founder of London’s Michelin starred, Texture Restaurant and wine inspired restaurant group 28-50.



French born Xavier Rousset studied to be a sommelier in Saumur in the Loire region of France. At the age of 20, he moved to the UK to start work as an Assistant Chef Sommelier at Gérard Basset's renowned Hotel du Vin in Bristol.

2002 was the year Xavier's career really took off. He was promoted to Head Sommelier at Hotel du Vin and won Ruinart UK sommelier of the year competition. He also passed the Master Sommelier exam, becoming the youngest MS in the world at that time. Xavier was the first runner up in representing France at ‘Trophée Ruinart Meilleur Sommelier d'Europe 2005.’

In 2004, he became Head Sommelier at Michelin-starred Le Manoir aux Quat'Saisons, where he met Head Chef Agnar Sverrisson, with whom he went on to set up his first venture. The two had a vision of creating a restaurant where food and wine are of equal importance, resulting in Texture Restaurant which launched in 2007 and in 2010, added a Michelin star to its list of awards.

Xavier and Agnar’s second venture, 28-50 Wine Workshop & Kitchen, launched on Fetter Lane in London in June 2010. Its raison d’être was to deliver an exceptional variety of wines at excellent prices alongside simple, classic French food. Due to its success, a second site opened in Marylebone in June 2012.

A big fan of fortified wine, Xavier has been selling an 1864 Madeira by the glass in 28-50. With fortified wine on the menu, and following Xavier’s recent trip to Portugal, Bibendum recommended the Quinta do Vallado 10 Year Old Tawny Port NV. The eighteenth-century Douro wine estate, Quinta do Vallado, is, in fact, one of the most modern-looking in Portugal. Although the team uses the traditional indigenous grapes, the production methods are bang up to date and the results are nothing short of sensational with rich nutty, dried fruit aromas and luscious, sweet raisin, mocha chocolate, spice and medjool date flavours.
